I usually hold off on the timeline discussion until late in the conversation, so I generally have a sense by then. At that point, problems with our schedule can be used to bow out gracefully.

Iv been really slow, not getting much leads but I have been working again for the past couple weeks but only till about next week.
So I get a call Sunday afternoon by my sisters friend saying she needs her apartment painted by Wednesday morning! As I had other commitments, but really needing any job I can get I went and took a look at it. I gave her a good price and said I could go there Monday afternoon with a painter that helps me out when need be and get it done as it was just walls to do and didn't need to be perfect.

Anyways as I was parking I bumped into a pole and smashes my tail light, frustrated I calmed myself down by telling myself. Hey at least I have a job to be able to replace it! Shortly after she called me to say she couldn't afford it anymore and was just going to do it herself....
Lesson learned. Don't try to squeeze stuff in last minute unless your for sure going to make a good profit!

Bid it so high they either turn it down or you've now made it worth any PITA issues.

Or, simply explain that you don't think you'd be good fit for their project. Most times that's the truth.
