If it's the color you want to change: wood bleach is the way to go, followed up with a neutralizer, sanding, and then stain as usual.
Getting Oak to look like Cherry? Hmmm... Never seen that happen. The Oak grain doesn't go away.
If you want to cover the grain, then you could use an epoxy paint tinted to the color of your choice, but first you'd have to get a grain filling compound. Off the top of my head, I can't recall what we used in the shop some years ago to do that, but there are products out there to do that.
