I like ML Campbells Woodsong II spray and wipe stain. It only requires 2 hours drying with a water based top coat. You spray it on, let it soak in, and wipe the excess. It is solvent based though. IMO it is super easy to use. We top coat with Magna Max H2O pre cat lacquer. It is water based, but has an amber tone to it to mimic a classic oil finish. I did a custom hood and walnut island top in my kitchen with it over 3 years ago and it has held up great, and we are not easy on that top. Ever since I tried that system, it is my go to.
