So I have an unusual situation for me. I have a client that has a pool inside their house. The ceiling and surrounding walls are wood and have been stained with a clearcoat with maybe a hint of tint. The bottom 4 feet of the walls have peeling from the previous stain and so does the ceiling. Im assuming I'll need to resand all the bare spots and then stain to match. The room has a dehumidifier in it, but it is not too effective in my opinion. The room is very humid. What is the absolute best clear coat to put on this? Also, should I use an exterior stain due to the humidity?

I doubt you will ever get it to match if you just work on the bare spots. They should have been told up front that a clear finish in a pool room will not hold up. Your best bet is to strip the finish off and use something like Daly's or TWP-WS or something that doesn't form a film so it can be maintained easily.
