Has anyone had experience brush and rolling Pro-Industrial Multi-Surface acrylic? My understanding is that dries very fast so it's hard to keep a wet edge. I understand it was designed more for spraying. Also it might have a tendency to run, must be a thinner paint. If I was to spray it any ideas of SF coverage?

All information as to SF and thinning is on the data page. I would recommend getting used to finding them on the manufacturer website. As per your application question, yes it dries pretty quick, has dryfall type properties, but you can brush and roll. I did a set of cabinets, sprayed the doors and drawers, b&r the boxes. It was an ok product all around. Very hard but nothing exceptional. I only used it for the self sealing properties, was going over old oak cabinets, so trying to avoid a stain blocking primer, it did ok.

I’ve used it only for spray finishes. It is relatively thin which is part of the reason it sprays so well. I would hesitate to try and brush it except as a necessity.
